Sundays are definitely relaxing days around our house these days. Ed & I get up in the mornings and leisurely prepare for church - usually going over our lesson one last time, eating a healthy breakfast, and if the kids are coming over for lunch, doing some prep work for that.
Like today.
Stephen and Emilee joined us for lunch today. I put them both to work helping chop foods and assemble the dishes I planned to serve. It's so much more fun when we all work together.
We had veggie and meat kabobs on the grill. After Stephen cut everything up, Ed assembled the wooden skewers, then Stephen (our grill expert) did his thing.
We had both turkey sausage and chicken with zucchini, mushrooms, onions, and green/yellow peppers. This photo is before grilling.
For our vegetable salad, I assembled some cucumber chunks, mini heirloom tomato halves, and carrot slices on a romaine leaf. Right before serving I sprinkled a bit of cheese on them. Ed chose Romano/Asiago cheese, Stephen had goat cheese, and I opted for tomato-basil Feta. Emilee decided to eat hers cheese-less.
Here's a healthy grain - red quinoa! I love the flavor of this grain. During the cooking process (which only takes minutes stovetop), I added garlic, onion, and some chopped celery. Very tasty!
Our fruit salad was a Waldorf salad made completely by Emilee. Chopped Pink Lady apples, celery, golden raisins, and walnuts in a blended mayo-lemon dressing made this a delightful tangy, crunchy addition to our meal.

It's hot outside today (90+ degrees) so we're staying in where it's cool, but still enjoying the sunshine coming through the windows. Someone is napping, someone is watching past episodes of the Office on the computer, someone else is doing final test prep for the last week of school (it's more fun now that he's a teacher and can give the test instead of take it!) and me...well, I'm sitting in the recliner happy to be surrounded by my family today.

So somehow I missed a post! The kabobs look so yummy - how does he actually do the grilling?
