I've been thinking about posting, but this has been a busy week so I'm just going to bullet this entry for reading ease.
- Lenten season is here and I've been meditating on several verses of scripture in preparation. A couple in particular: Philippians 4:8 and I Corinthians 10:23-24. These verses have spoken to me directly about some things in my life - things that interrupt where my focus should be right now. I'm listening to my Savior and following His lead.
- The Wellness plan is going well, though a slight head cold this week slowed down the exercise progress. I should be back on board soon.
- Nutritional research and reading have been very helpful lately in my meal planning and eating healthy foods.Two books I found recently:
The author is Michael Pollan and I enjoy his style of writing.
Both books have definite insight on food and the "western diet" as he refers to the standard American diet (SAD).
He beckons us to reconsider our eating habits and take a close look at the food industry as a whole and scrutinize what we put into our bodies.
I have a couple more nutritional books I'm reading - I'll talk about those in another post.
- I'm still experimenting with different ways to prepare healthy meals - this morning I made an egg breakfast sandwich.
First I sauteed some fresh bella mushrooms,a tiny bit of zucchini, and some onion in a skillet with a few drops of olive oil, seasoning with a few sprinkles of lemon pepper.
I cooked this mixture until the onions were translucent and soft.
I added about a half cup of liquid egg whites to the skillet and cooked this mixture until the egg was slightly browned on each side, flipping once as it cooked.
While the egg mixture was cooking I prepared the rest of the sandwich:
An Arnold's Sandwich Thin - I've been wanting to try this product for awhile since I saw them on the grocery shelf and so last week I picked up a package.
I don't normally buy many bread products since I make my own at home from scratch, but these looked like a healthy product.
They remind me of pita bread in their texture and weight.
I spread a wedge of Laughing Cow cheese on each half after I toasted it.
This was a great hot breakfast - cheesy, melty, and very filling. My only complaint was that the egg filling kept sliding out of the "bun" each time I took a bite! Ha!
This sandwich plus a piece of fruit was a great start to my day.
I usually have oatmeal 3-4 times per week (either steel cut or overnight oats) and an egg dish twice a week. Green smoothies also make an appearance a couple times a week.
- Tomorrow is grocery shopping day - hopefully I'll get that done first thing in the morning so I have the rest of the day to do other things. I'd like to spend some time in my craft studio and make a few cards. Maybe a little freezer cooking, some afternoon reading with a cup of hot tea, and ironing my husband's shirts. Lots to do - even if the weather is cold and blustery outside!
That egg thingy looks good. I'm making overnight oats tonight for breakfast tomorrow. I have a super long day ahead of me, so I figured I needed to start off with a good breakfast. Also, I'm hoping to do yoga in the morning. I hope I have time!!

This looks great, Denise. I've been making eggs in the morning and including quick stir sauteed asparagus, onion and a little bit of goat cheese. Oh my goodness is it delish. And it only takes about 10 min. from start to finish!

It's good to know that we are both on target. It is a good feeling, for sure. It's been fun finding things to eat that are good and good for me.
It's fun to see how many of my friends are NCIS fans!

We love those Arnold's "buns" - and don't you love those square white plates?! Mom & I both have a couple of them. I use mine all the time!
