I've talked a lot about my appreciation for oatmeal on this blog - a hearty way to start the day.
However, I recently discovered a wondrous delight in oatmeal soaked overnight. In reading several health food blogs, I found many mentions of this phenomenon. So I decided to give it a try last night. I love eating oatmeal for breakfast as it is very filling and keeps me satiated for a good part of the morning.
I mixed all the ingredients (see recipe below) in my morning oatmeal bowl, covered it, and placed it in the refrigerator overnight.
If you decide to make this recipe be sure you use a large enough bowl to accommodate the "expanding" mixture - it will swell a bit.
One of my favorite reasons to eat oatmeal 3-4 times per week is choosing which toppings to add to it in the morning.
I love adding fresh fruit as one of the toppings - bananas, berries, cherries, grapes, kiwi to name just a few of my favorites.
This morning I also added a tablespoon of almond butter and sliced almonds along with some fresh blueberries.
This can be eaten cold, right from the fridge or can be warmed slightly before adding the toppings.
Here is the recipe for my overnight oats. Feel free to be creative with your own bowl.
Overnight Oats
- 1/2 c. Greek yogurt, plain
- 1/3 c. old fashioned oats
- 1/3 c. almond milk
- 1 T. chia seeds
- 1/3 c. pumpkin
Refrigerate overnight. Add toppings in the morning, as desired.

Very interesting. I need to find the recipe I have for overnight steel cut oats you do in the crockpot. Have been wanting to try it.

Very interesting! I am enjoying the steel cut oats. I need to cook some more today.
So Dee Henderson isn't writing any more? I have the rest of this series and another one, at least, to enjoy.
