I've been thinking a lot about salads and side dishes to go with our meals (or as meals themselves) during these hot months that are upon us now.
One of our favorites is Asian Slaw. It is quick to make, but does take a little planning as it should be made ahead of time so it can be refrigerated overnight to blend the flavors well.
It's a very colorful salad with lots of crunch because of the fresh vegetables and noodles added.

I hope to share a couple recipes a week of some great summer salads here on my blog over the next few weeks. Let me know if you have a favorite that we may want to try!
Asian Slaw
1 pkg of cole slaw
1/4 c. sliced almonds
2 T. sesame seeds
4 green onions, sliced
1 pkg Chicken Ramen Noodles (remove seasoning packet)
2T. sugar
1/2 C. vegetable oil
1 T. white vinegar
2 T. cider or raspberry vinegar
1/4 tsp. cracked pepper
Seasoning packet from Ramen
Pour slaw mix into a large bowl. Crush ramen noodles into bowl and add sliced onions, almonds, and sesame seeds.
Whisk the remaining ingredients together in a small bowl until thoroughly mixed and pour over slaw mix.
Stir. Cover bowl and refrigerate overnight. Stir again before serving. Serves: 6-8

That's the only slaw I really like - it is delicious. I love that bowl. I broke my favorite salad bowl and sure wish I could find one like that for 50 cents!
The heat has finally arrived here. I like the cooler air myself!

YUM! This is one of my very favorite salads in the whole wide world. You could just set your beautiful glass bowl in front of me and I would shamelessly shovel down the whole thing by myself. Really. I love it that much.
And now I'm inspired by your bowl! I already have a pretty glass bowl from my mom, but that sure is a great find!

I found you through Ann's Food on Friday. I love cole slaw, especially with BBQ pork. Haven't tried this version but I love your concept - the raspberry vinegar probably gives a great tang. :) I bet this is a hit at all the summer get-togethers!

I love trying new summer salad recipes. My Friday post was about keeping cool along with a quick and easy chicken salad recipe. Now I find your Asian slaw.....can't wait to try it. Just like another one of your commentors I'm thinking this will be good with BBQ pork. Definitely will add this to my salad list. :)
